Welcome to QB Cucina by chef Federico Viti. In Italian, “QB” means quanto basta - ”just enough.” Inspired by the time-honored instincts of our grandmothers, who cooked with care and intuition, QB Cucina  embraces this same ethos: sourcing locally, minimizing waste, and letting nature guide the kitchen.

We celebrate a fully vegetarian table that reflects harmony with the land. Everything begins with what we grow: vegetables from our gardens, eggs from our free-roaming hens, honey from our own hives, and produce from trusted organic partners in the region.

LUNCH

Join us for a midday meal that brings the estate to your plate. Our lunch menu shifts with the rhythm of the land, spotlighting freshly harvested ingredients and expressive wines from our own vineyards (plus an alcohol-free option for those who prefer). Each visit is a unique expression of the season.

On Wednesday, Friday and Saturday nights, Chef Federico crafts a thoughtfully composed set dinner menu. Without lunch service on this day, our team focuses entirely on a refined multi-course journey inspired by the week’s harvest—an immersive expression of QB Cucina’s culinary identity.

Cook with Us

Discover the soul of Tuscan cooking with our immersive classes held Thursday to Saturday afternoons. Begin with a guided tour through our gardens and wine cellar before rolling up your sleeves for a practical cooking session. The evening ends with a shared meal, paired perfectly with our estate wines.

At One Belvedere Tuscany, we grow most of our ingredients on-site using regenerative and organic methods that heal the soil and protect biodiversity. Every dish begins with a conscious choice to respect the earth and those who work it.

We are proud to collaborate with small-scale, ethical producers across Tuscany who share our values of fairness, transparency, and care. Many of our ingredients are crafted in-house—from jams, breads, preserves, and kombucha to handmade pasta and infused oils - ensuring integrity at every step.

For us, sustainability is not a marketing word. It is a daily practice, rooted in regenerative agriculture, holistic systems, and measurable accountability. We believe in doing what’s right - even when it takes more time, more effort, and more heart.

In keeping with our commitment to living in harmony with the land, guests arriving by electric vehicle will find a Type 2 charging station available on-site. Quietly efficient and easy to use, it’s our way of ensuring that sustainability doesn’t stop at the kitchen door.
